Eight Oaks Pinot Bourbon. Image courtesy Eight Oaks Craft Distillers.This unusual Bourbon from 8 Oaks Craft Distillers in New Tripoli, Pennsylvania is matured for 18 months in new charred American Oak barrels, then goes into Pinot Noir wine casks from a Lehigh Valley-area winery for final maturation. The nose is aromatic with notes of oak tannins, red grapes, vanilla, honey, brown sugar, and caramel. The taste is thick, chewy, and slightly tart with red grapes, a touch of citrus, and soft spicy touches of black peppercorns and allspice that balance nicely with honey, vanilla, and caramel in the background. The finish is long and fruity with subtle spices. Unusual, but nice. (April, 2018)
