This 2018 release from Ireland’s Dingle Distillery is matured in a combination of ex-Bourbon, Oloroso, and Pedro Ximenez sherry casks. The nose is grassy and tart with notes of lemon zest, freshly-cut grass, honey, vanilla, and a hint of toffee sweetness. The taste is tart and spicy with lemon pepper, dried flowers, apricots, honey, and toffee. The finish is long and tart with lingering spices. (January, 2019)
