Image courtesy The Cotswolds Distillery.This cask-strength English single malt is matured in American Oak red wine barriques using a unique process developed by the late Dr. Jim Swan in which the casks are shaved, toasted, and recharred before being filled with spirit. The nose has fruity notes of raspberries, red grapes, a touch of plums, along with hints of vanilla, oak, and a nice maltiness. The taste is thick and jammy with cooked fruits, raspberry jam, clove, a hint of cinnamon, and charred oak. The finish is long with lingering notes of cooked fruits, berry cobbler, and subtle spices.
