This heavily peated whiskey from Ireland’s Cooley Distillery has a peaty and phenolic nose, along with heather and subtle touches of vanilla and honey. The taste starts off with honey and brown sugar before the peat takes over with a touch of potting soil. The peatiness is slow to fade, but when it does, a slight lemony note appears and stays through the finish, along with the lingering peat and a hint of brown sugar.
