This is the debut release from Ireland’s Connacht Distillery…a 4-year-old double-distilled single malt matured in ex-Bourbon casks and finished in Oloroso Sherry casks. The nose is malty and grassy with touches of straw, citrus fruits, and ginger. The taste is tart, syrupy, and malty with honey and butterscotch notes at first, followed by a nice bite of lemon pepper and ginger with barley sugar, orange oil, and grass clippings in the background. The finish is long and aromatic with a slight citrusy tartness. An excellent debut! (August, 2021)
