This is the oldest release yet from Chambers Bay – a 5-year-old Bottled in Bond Bourbon matured on Washington’s Puget Sound. Not on the “shores of Puget Sound,” but actually on the Sound in a floating boathouse converted into a rickhouse. The nose has notes of toasted caramel, vanilla, dark chocolate, honey, and a soft oakiness. The taste has a good balance of oak, honey, toasted caramel, and touches of peppercorns and allspice. The finish is medium-length with a good balance of honey, oak, and caramel. (January, 2020)
