Cedar Ridge is best known for its QuintEssential single malts, but makes some fine Bourbons as well. The nose on this Amontillado Sherry-finished Bourbon has caramel and fig notes on top of dried fruits, oak, and sandalwood. The taste is thick, astringent, and chewy with a Sherry influence at first, followed by baking spices, caramel, and dates. The finish has figs and dates on top of lingering cinnamon spice, soft oak, and honey. Very complex. (August, 2024)
