Castle & Key Restoration Rye Batch #1. Image courtesy Castle & Key Distillery.This is the first release from Castle & Key, which revived what had been known for decades as the Old Taylor Distillery in 2017 after years of restoration. The nose has notes of molasses cookies, chocolate fudge, subtle spices, and a hint of maple syrup. The taste is thick, chewy, and sweet at first with touches of dried fruits and molasses cookies followed by a burst of baking spices. Chocolate fudge and a touch of oak in the background add complexity. The finish is long and dry with lingering spices and hints of chocolate fudge and molasses cookies. An excellent debut!
