Image courtesy Cascade Hollow Distilling Co./Diageo.This is the first in a new line of whiskies from Diageo’s Cascade Hollow Distilling Company in Tennessee, known best for its George Dickel Tennessee Whiskies. It’s an 11-year-old whiskey with notes of peach cobbler, butterscotch, dried flowers, and cedar shavings on the nose. The taste starts off fruity and sweet at first with peaches and apricots, followed by a spicy burst of white pepper and allspice complemented by honey and butterscotch candies in the background. The finish is long and fruity. (November, 2020)
