The third volume in Diageo’s Cascade Moon series from the Cascade Hollow Distilling Co. in Tennessee had its start at MGP’s distillery in Lawrenceburg, Indiana. After three years of maturation, the barrels were moved to Cascade Hollow and left to rest for nearly a decade. The result is a rye whiskey with baking spices on the nose along with touches of black cherries, caramel candy, leather, and pipe tobacco. The taste has a good balance of spices and sweetness with notes of clove, black pepper, nutmeg, caramel apples, black cherries, toffee, and vanilla. The finish is long with lingering spices and touches of black cherries and oak. Excellent! (December, 2021)
