Caol Ila 15 (2016 Release). Image courtesy Diageo. This is the annual unpeated edition of Caol Ila in the 2016 Diageo Special Releases series, and the nose has notes of straw, freshly-cut grass, pine needles, a hint of lemon zest, and a slight whiff of campfire smoke. The taste has spicy notes of cinnamon and white pepper balanced by toffee and a hint of lemon zest, and you’ll want to add some water to this one – it opens up nicely and amps up the citrusy tartness with a touch of dark chocolate. The finish is long and aromatic with touches of black pepper and lightly-roasted coffee beans (think a Starbucks blonde roast). (January, 2o19)
