This is the annual unpeated edition of Caol Ila in the 2016 Diageo Special Releases series, and the nose has notes of straw, freshly-cut grass, pine needles, a hint of lemon zest, and a slight whiff of campfire smoke. The taste has spicy notes of cinnamon and white pepper balanced by toffee and a hint of lemon zest, and you’ll want to add some water to this one – it opens up nicely and amps up the citrusy tartness with a touch of dark chocolate. The finish is long and aromatic with touches of black pepper and lightly-roasted coffee beans (think a Starbucks blonde roast). (January, 2o19)
