This year’s edition uses heirloom Bere barley grown on Orkney and matured in a combination of first-fill ex-Bourbon barrels and second-fill Pauillac wine casks. The nose has touches of lemon zest, vanilla, honey, fresh berries, sea salt, and a hint of heather. The taste has notes of pineapple, fresh berries, lemon zest, sea salt, and a hint of heather. The finish is long, fruity, and tart. (January, 2025)
