This batch blends together straight Bourbons from Tennessee, Indiana, and Kentucky ranging from 10 to 14 years old, and the nose has a toasted sweetness with notes of caramel, charred oak, molasses, and muted spices. The taste is spicy with cinnamon, black pepper, and allspice that fade very slowly to reveal sweeter notes of honey, caramel, and brown sugar. The finish has lingering spices complemented by honey, caramel, and charred oak. (May, 2020)
