Bare Knuckle American Wheat Whiskey. Image courtesy KO Distilling. This one-year-old whiskey from Virginia’s KO Distilling is made from a mashbill of 60% wheat, 30% rye, and 10% malted barley. The nose is aromatic and sweet with notes of honey, caramel candy, vanilla, soft spices, and a hint of pipe tobacco. The taste is tart and spicy with a hint of lemon zest and black pepper balanced by honey, caramel candy, and vanilla notes in the background. The spiciness lasts through the finish and fades away slowly, while the sweeter notes disappear more quickly. (August, 2018)
