This is the cask-strength brother of the Balcones Texas Rye 100 Proof, and is only available in limited amounts at the distillery in Waco, Texas. It’s 30 months old, twice as old as the 100 Proof, and made with the same mashbill of four different types of rye grain. The nose has is dry with hints of toasted bread, honey, and subtle spicy notes of clove and allspice for a more refined nose than the 100 Proof. The taste is mouth-coating, oily, and spicy with pungent clove and black tea notes that fade slowly to reveal touches of caramel apples, honey, oak tannins, and bitter baking chocolate. A few drops of water actually amps up the spices and brings them forward to the tip of the tongue. The finish is long and dry with lingering spices and subtle sweetness and oak touches. Very nice!
