Balcones Distilling in Waco, Texas, was right on the path of totality for the April 8, 2024 total solar eclipse, and released this single malt to commemorate the occasion. The distillery traditionally makes its single malts with two different types of yeast – an ale yeast and a standard distiller’s yeast. For this whisky, they replaced the ale yeast with red and rosé wine yeasts and got a whisky with a fruity and floral nose with touches of ginger and dried flowers for a light and delicate aroma. The taste is creamy and fruity with notes of tropical fruits, dried flowers, raspberry jam, a hint of white pepper, and a subtle touch of oak. The finish is long and very tart with tropical fruits and a lingering hint of white pepper. Excellent! (April, 2024)
