291 Colorado Whiskey. Photo ©2016, Mark Gillespie.This whiskey from 291 Distillery in Colorado Springs comes from a rye-based mash, and is finished in barrels with staves made of aspen. The nose is grassy with notes of straw, nutmeg, charred oak, ginger, and vanilla. The taste is spicy with clove, white pepper, and a hint of chili powder, along with caramel cola, vanilla, and a hint of mint in the background. The finish is long and aromatic with hints of chocolate mint, red apples, and charred wood. (February, 2016)
