10th Street Distillery STR Cask Single Malt. Image courtesy 10th Street Distillery.This one-year-old single malt from California’s 10th Street Distillery uses the “STR Cask” method pioneered by the late Jim Swan that takes wine casks and shaves the inside before toasting and re-charring. The nose is fruity with fresh berries, apples, and a touch of canned peaches balanced by honey and caramel notes. The taste is thick and fruity with a slow buildup of spices, peach nectar, strawberries, honey, and caramel. The finish is long and fruity with subtle spices. (August, 2020)
