Distilling is often referred to as a “black art,” and Jim McEwan’s wizardry takes center stage here. Jim vatted together an undisclosed number of casks, and the red color suggests some port casks were used. The port wine notes on the nose also buttress that idea, and the notes of honey, rose petals, berries, and sea air add complexity. The taste has notes of marzipan, brown sugar, dark chocolate, and is smooth and easily drinkable without water. The finish is slightly tart and nougaty. A classic!
