This Bourbon is named after Mary Dowling, who operated a distillery in Kentucky before Prohibition, and escaped Prohibition by moving her entire operation to Juarez, Mexico. It’s finished in toasted Oak barrels, and the nose has touches of toasted caramel, créme brûlée, dry spices, a hint of oak tannins, and red apples. The taste has oak tannins, black pepper, and chili powder notes that fade slowly to reveal hints of baked apples and toasted caramel. The finish is long with lingering spices. (August, 2023)
