Whisky Sponge is the pen name for Angus MacRaild, a whisky blogger and one of the partners in Decadent Drinks, and created this whisky in collaboration with the team at Signatory Vintage. They blended a first-fill ex-Sherry butt of Edradour 2010 with a refill hogshead cask of Edradour’s peated Ballechin 2003, and the result is an interesting combination of peat and Sherry influences. The nose has notes of burned fig cookies, dates, toasted raisin bread, grilled citrus, and a hint of honey. The taste is thick, oily, chewy, and peppery with a nice balance of grilled fruits, peat smoke, and honey. Adding water opens up more fruitiness along with a touch of baking chocolate. The finish is long and smoky with a touch of bitter baking chocolate. Not for everyone’s taste…but wow! (May, 2021)
