This 2-year-old Bourbon from Still Austin Distillery in Texas has an aromatic nose with toasted vanilla, caramel, muted spices, and touches of oak and old leather. The taste is spicy with black pepper, chili powder, and a hint of cinnamon bark, and the spices fade very slowly to reveal toasted caramel, honey, and a hint of oak. Water opens up touches of apples and peaches on the palate as well. The finish is long and spicy with a nice underlying sweetness. (June, 2021)
