This Bourbon named for Baker Beam carries a 7-year age statement on the label, but that’s just a minimum age. As with all single barrel whiskies, the age and character can change from barrel to barrel – for instance, the sample I received was actually 8 years and 7 months old. The nose is very dry with notes of caramel, cocoa beans, baking chocolate, subtle spices, and a hint of tobacco. The taste has a good balance of honey and caramel sweetness with spicy notes of black pepper and cinnamon, while touches of dried fruits come out as the spices start to fade. The finish is very long and spicy with a nice underlying sweetness. Excellent! (December, 2020)
