Another one of Waterford’s Single Farm Origin releases, with barley grown on Ned Murphy’s farm in County Kilkenny. The nose is malty with dried flowers, butterscotch, honeycomb, and a hint of lemon zest. The taste is well-rounded and full of flavor with barley sugar, lemon pepper spiciness, butterscotch, honeycomb, and a hint of linseed oil. Water makes the whiskey even more balanced, muting the spices while boosting the citrusy character. The finish is long and slightly dry with a subtle tartness. (August, 2020)
