Pinhook’s founders were among the first to take part in Castle & Key Distillery’s custom distilling program when the distillery reopened on the site of Kentucky’s historic Old Taylor Distillery in 2017, and this is the first Bourbon release known to have been bottled from Castle & Key. The nose has notes of caramel ice cream topping, a hint of oak sawdust, soft spices, honey, and a hint of old leather. The taste is spicy, thick, and chewy with black pepper, cinnamon, and a hint of clove complemented by honey and touches of oak and caramel. The caramel sweetness comes alive on the finish as the spices fade along with honey and dark chocolate. (July, 2020)
