Laws Whiskey House in Denver makes its Secale Straight Rye in regular and cask-strength versions, and the cask-strength version has a very aromatic, yet dry and dusty nose with touches of baking spices, dill and garden herbs, and brown sugar in a good balance. The taste is spicy and complex with clove, cinnamon red-hot candies, and black pepper balanced by brown sugar, caramel, honey, and a hint of oak tannins leading into the finish. The finish is oaky, dry, and very long with sawdust and lingering spices. Adding some water opens up the whiskey nicely with dried flowers and a delayed onset of spices on the palate. Very nice!
