Eimverk Distillery in Iceland makes this 3-year-old single malt with locally-grown barley and finishes it in Birch casks, which are too porous to allow for a long maturation period. There’s a nice touch of birch wood smoke on the crisp, sweet nose that reminds me of when we used to burn birch wood in the fireplace while living in Alaska, along with a touch of tangy barbecue sauce, dried flowers, and a hint of heather. The taste is excellent with a good balance of white pepper, cardamom, and a hint of cinnamon spices that last and last while not overpowering touches of honey, anise, and licorice in the background. The finish is very long and aromatic with dried fruits and just a touch of lingering spices. (February, 2020)
