Deanston 1997 Palo Cortado Finish

This single malt was part of the Distell special releases in 2019, and was matured for 19 years in ex-Bourbon barrels with a final two years in Palo Cortado Sherry casks. The nose has notes of crème brûlée, toasted oak, fig cookies, muted spices, and a touch of Manuka honey. The taste starts off with a touch of caramel cola, followed by a burst of white pepper and ginger spices with hints of figs, vanilla, and toasted oak underneath for a nice complexity. The finish is very long with gently fading spices, honey, fig cookies, and a hint of toasted oak. Outstanding! (January, 2020)
