Colin Keegan of New Mexico’s Santa Fe Spirits makes his cask-strength edition by taking his American single malt whiskey and finishing it in his Apple Brandy barrels. The nose is aromatic and complex with hints of sandalwood, mesquite, charred oak, toasted caramel, allspice, and a hint of crystallized ginger. The taste is woody and spicy with black pepper, chili powder, charred oak, vanilla, sandalwood, and a hint of caramel apples. The finish is long and spicy with a gentle woodiness and hints of dried fruits. (November, 2019)
