Single Pot Still whiskies are an Irish tradition, but Colorado’s Talnua Distillery has adopted the idea and is distilling a combination of malted and unmalted barley in the Irish style. Inishan blends Talnua’s own young whiskey with older Irish grain whiskey from Cooley Distillery in a 50/50 blend. The result is a whiskey with a light, creamy, and floral nose that has touches of honey, vanilla, and maple. The taste is creamy with a citrusy tartness and hints of cinnamon and allspice balanced by honey, vanilla, dried flowers, and a hint of menthol. The finish is long and fruity with a gentle hint of spice. Very nice! (July, 2019)
