This single malt from an undisclosed Irish distillery is matured in first-fill ex-Bourbon casks, and the nose has notes of honey, butterscotch, barley sugar, and a soft touch of oak. The taste starts off creamy at first, followed by a good spicy bite that comes alive with touches of coriander and allspice balanced by sweeter notes of honey and butterscotch. The finish fades away gently with a nice lingering spiciness. (March, 2019)
