The 2018 edition of Pike Creek 21 from Corby’s Northern Border Collection Rare Series is matured in ex-Bourbon casks and finished in a combination of French Oak and Hungarian Oak. The nose has notes of buttered popcorn, honey, straw, muted spices, and a gentle oakiness. The taste has a subtle tartness with lemon zest, allspice, and a hint of black pepper balanced by cooked bananas in the background and touches of honey and vanilla. The finish is long and smooth with lingering spices and a hint of honey. (January, 2019)
