Jessica and Phil Crouch do everything from grain to glass at their family distillery in Columbia, South Carolina, and their straight Bourbon is made from a mash bill of 60% blue corn, 30% malted rye, and 10% malted barley. The nose is aromatic and spicy with hints of clove and allspice balanced nicely by sweeter notes of honey and brown sugar. The taste is tart and spicy with nicely-balanced notes of lemon pepper, allspice, honey, vanilla, and caramel. The finish is long and smooth with subtle spices. (October, 2018)
