This Irish single malt is blended from Cooley casks selected by longtime Scotch Whisky maker Stuart Nickerson for Tipperary Distillery, which is owned by his daughter and son-in-law. Stuart selects six first-fill ex-Bourbon casks of varying ages for this whiskey, which has a nose of caramel candy, vanilla, honey, dried flowers, and a touch of fudge. The taste starts off with notes of black tea, lemon, and honey – followed by a pepperiness that comes alive and lingers through the finish with notes of white pepper, ginger root, honey, vanilla, and a hint of oak.
