This is Wyoming Whiskey’s first attempt at a “finished” Bourbon using ex-Sherry casks, and the nose has notes of dried fruits, caramel, vanilla, a touch of allspice, honey, and oak. The taste has good spicy notes of allspice and peppercorns with underlying sweeter notes of dried fruits, honey, caramel, vanilla, and a subtle touch of lemon zest leading into the finish. The finish is long and smooth with lingering spices and subtle hints of dried fruits. Very nice! (March, 2017)
