Image courtesy Liberty Pole Spirits.This unique whiskey comes from Liberty Pole Spirits and the Mingo Creek Craft Distillery in Washington, Pennsylvania, where distillers Rob and Kevin Hough switched out the wheat they normally use in their regular Bourbon mashbill with heavily peated barley from Scotland. The whiskey is matured for just a few months in small barrels, but comes out with a smoky, grainy nose that has notes of burned popcorn and toasted marshmallows. The taste is smoky and peppery with allspice and cinnamon notes to go along with the peat smoke, while vanilla and caramel notes underneath add balance. The finish is long and smoky with lingering spices. This whiskey is still young and fiery, but as the Hough brothers give it more time in the barrel, watch out! (March, 2017)
