This Irish single malt comes from Beam Suntory’s Cooley Distillery, and was matured in ex-Bourbon barrels. The nose is fruity with notes of honeydew melons, green apples, pears, coconut cream pie, vanilla, and a hint of almonds. The taste starts off thick and oily, then turns intensely fruity and spicy with grilled pineapple, green apples, honeydew melons, touches of allspice and ginger root, coconut cream pie, and almond oil. The finish is long with lingering allspice and ginger root notes and touches of rosemary and spearmint with a good overall balance. Very nice! (March, 2017)
