This wheat whiskey is matured for two years in new 10-gallon charred American oak barrels, and the nose has notes of charred oak, butterscotch candies, vanilla, eucalyptus throat lozenges, and a hint of honey. The taste has a thick and oily mouthfeel that coats the tongue with good spicy notes of allspice and ginger root, then turns sweet with honey, brown sugar, butterscotch, and a hint of eucalyptus throat lozenges. The finish has a surprising touch of smoked salmon that comes out of the background to balance sweet honey and butterscotch notes. Nice! (March, 2017)
