This single malt from Yukon Spirits in Whitehorse starts out in a combination of ex-Bourbon and Virgin Oak casks, and is finished in Pedro Ximenez sherry casks. The result is a well-balanced nose with notes of peach cobbler, nectarines, and soft warm spices. The taste has ground black pepper, nutmeg, and a hint of ginger balanced by nectarines, honey, and a hint of mango – with the flavors in excellent balance and fading away nicely on the smooth finish.
