This unique whiskey from Corsair Artisan Distillery uses a mashbill of oats and barley, and the nose has notes of oatmeal, clove, anise, brown sugar, and a meaty touch of roast beef broth. The taste starts off light on the palate at first, followed by a hint of maple, and then a burst of black pepper that lingers over hints of maple, brown sugar, and oatmeal underneath. The finish has slowly-fading spices and touches of honey and maple. (December, 2015)
