The Dead Rabbit Irish Whiskey. Image courtesy Quintessential Brands. This whiskey gets its name from the New York City bar, and was created by Darryl McNally of Ireland’s Quintessential Brands in collaboration with Dead Rabbit founders Sean Muldoon and Jack McGarry. It’s a 5-year-old blend of Irish grain and single malt whiskies finished in virgin American oak casks, and the nose is buttery-smooth with notes of buttered popcorn, butterscotch candies, vanilla, honey, and muted spices. The taste starts off creamy and smooth, then the spices come alive with clove, ginger, and a hint of white pepper along with vanilla, honey, and butterscotch notes underneath. The finish is long and warming with subtle spices, honey, and butterscotch. Overall, excellent balance and complexity. (February, 2018)
