Photo ©2019, Mark Gillespie/CaskStrength Media.Sonoma Distilling’s Adam Spiegel distilled this whiskey from a mashbill of 80% rye, 10% wheat, and 10% cherrywood smoked barley. The nose has subtle spices, cherry-infused pipe tobacco, and hints of figs and almond oil. The taste has excellent notes of baking spices with allspice, clove, and a hint of nutmeg complemented by pipe tobacco, almond oil, leather, and caramel. The finish is long with gentle spices and a slightly dry mouthfeel. (January, 2019)
