Tomatin 1981 Single Cask #001. Image courtesy Tomatin. This single malt comes from the very first cask Tomatin filled after New Year’s Day in 1981, an Oloroso Sherry butt left to mature for 32 years before being bottled with no chill-filtering at cask strength.

The nose is full of Christmas cake, subtle clove and ginger spices, coffee liqueur, and a hint of wet leather. The taste starts off light and fruity, but still complex with notes of orange, pineapple, and a touch of mango. Notes of raisins and Christmas cake come out with time, along with a slight hint of mint near the finish. The finish is long and smooth with hints of ginger and allspice balanced by brown sugar and caramel candy sweetness. Excellent! (January, 2015)
