This Canadian single malt comes from Still Waters Distillery near Toronto, and is a single cask bottled at around 3 1/2 years old. The nose is malty and grassy with hints of lemon peel, oak, vanilla, honey, and caramel with hints of spices. The taste is light and thin at first, followed by a burst of lemon pepper with hints of grapefruit, cloves, and hints of vanilla, honey, and straw underneath. The finish is tart, spicy, and long. It’s young and fiery, but with good potential. (May, 2014)
