Stalk & Barrel Cask #1. Image courtesy  Still Waters Distillery.This Ontario single malt is just about 3 1/2 years old, but has great promise for the future. The nose has a good balance with notes of toffee, clove, honey, and a hint of vanilla. The taste is chewy with a good mouthfeel and notes of butterscotch, toffee, and honey that provide sweetness while balanced by a touch of clove spiciness. There’s some maltiness in the background along with a dab of vanilla. The finish lingers nicely with a clove spiciness and aromatic notes of creme brulee, butterscotch, and toasted marshmallow.
