This 4-year-old Bourbon was bottled in 2015 for Rock Town Distillery’s 5th anniversary, and is the distillery’s first bottling using whiskey matured in full-size casks. The “bottled in bond” designation means it was the product of a single distillery during a single distilling season, matured for at least four years in a federally bonded warehouse, and bottled at 50% ABV (100º proof). The mashbill was 70% Arkansas corn, 10% Arkansas wheat, and 20% malted barley.

The nose is soft and clean with notes of fresh-baked bread, muted spices, dark chocolate, hints of pecans and walnuts, and a touch of charred oak. The taste is peppery with good black pepper and cinnamon notes at first, a touch of clove that comes out with time and adds complexity, and notes of dark chocolate, vanilla, nuts, and oak that add balance. The finish is long, spicy, and smooth with subtle honey and brown sugar touches underneath. Very nice. (June, 2015)
