Despite the ex-Bourbon cask maturation, the nose opens up with sherry-like notes of figs and toffee, along with caramel followed by oak, leather, and pipe tobacco in a very aromatic balance that is almost cologne-like. The taste is dry, tart, and mouth-puckering at first, then turns spicy with lemon pepper, a hint of clove, and touches of linseed oil and licorice that come out as the spices fade along with a touch of molasses. The finish is medium-length, dry, and subtle with hints of licorice, molasses, figs, toffee, and dark chocolate. Outstanding! (October, 2014)
