Jim Beam Distiller's Masterpiece Bourbon. Image courtesy Jim Beam.This Bourbon is finished in Pedro Ximenez Sherry casks that help smooth off some of the whiskey’s sharper edges. The nose has notes of peach cobbler, blackberries, honey, vanilla, caramel, butterscotch, and a hint of molasses. The taste is thick and spicy with cinnamon, allspice, and black pepper notes that fade slowly to reveal honey, vanilla, caramel, anise, and brown sugar. The finish is long and sweet with a nice lingering spiciness. (January, 2016)
