This 7-month-old whisky from New York’s Coppersea Distilling is unique in that it’s made from malted rye that goes straight from the malting floor to the mash tun without being dried in a kiln, giving it the name “green malt.”

The nose is grainy and earthy with notes of dried pine needles, manuka honey, garden soil, hints of thyme, rosemary, and toasted bread for a very aromatic nose. The taste starts with a cola note, then quickly turns peppery and tart with black pepper, lemon and lime citrus flavors, and hints of honey and dried flowers underneath. The finish has a lingering rye spice along with a touch of brown sugar, grapefruit and other citrus notes. A very interesting whisky. (February, 2015)
